Eisleker Kéis - made from premium Demeter milk - without silage

In the past, cows ate only grass and sun-dried hay in summer and winter. What used to be normal is now considered a speciality - and is the exception even on organic farms: many organic cows are fed maize or
grass silage in winter and get an extra portion of concentrated feed in the form of cereals, lupines, peas or field beans.

Fresh grass and hay instead of silo

The cows on the Schank-Haff are among the lucky ones of their kind that are still traditionally fed like in the old days. Silage is deliberately avoided. The cows are fed according to the seasons: From spring to autumn, they graze on pasture and eat fresh grass and aromatic herbs. In winter, the animals live in a spacious box stall with straw bedding and are mainly fed hay supplemented with cereal meal and some potatoes and carrots - all grown on the farm.

For enjoyment and biodiversity

The aromatic, "silage-free" fodder gives Demeter milk its special taste, making it the ideal basis for cheese production. Incidentally, this type of dairy farming also makes a significant contribution to the preservation of biodiversity, because the grasses and herbs do not fall victim to early silage mowing, but can flower out and thus provide a livelihood for many insects.

Since 1989, the milk produced in this way has been processed by Schanck-Haff into hard and semi-hard cheeses with great care and craftsmanship. Meanwhile, there is a whole range of "Éisleker Kéis" to choose from. There is natural cheese and mountain cheese, cheese with garlic, with pepper, with herbs, with mustard or with paprika. You can buy the cheese sliced, diced, grated or in one piece - at the cheese counter or in the refrigerated section, in the NATURATA Bio Marchés or in the supermarket.
